1 1/2 ounces Amber (Gold) Rum
1 1/2 ounces Dark Rum
1 1/2 ounces Gin
1 Tablespoon Cointreau
2 Tablespoons Lime Juice

Calico Coffee

Inspired by the “special” coffee we enjoyed when we performed in Mexico…

4 ounces Hot Coffee
1 ounce shot Espresso
1 teaspoon Dark Crème de Cacao
1 teaspoon Kahlúa
1 teaspoon Frangelico
1 teaspoon Jack Daniels
1 ounce Heavy Cream
Ground Cinnamon
Cayenne Pepper
Stir together coffee, espresso, and liquors. Pour heavy cream slowly over back of teaspoon so it floats on top of drink. Sprinkle with cinnamon and cayenne pepper. Warms one.

Calico Wings

Two events triggered the need for Calico Wings. First, tasty buffalo wings at the Indianapolis Airport Sheraton lounge followed the next evening by the newspaper headline “Calico Wings Opens CCA Season.”

2 pounds chicken wings
2 tablespoons tomato paste
2 garlic cloves, pressed
A Louisiana Hot sauce (we like Red Rooster)
1/2 teaspoon cayenne
1/2 teaspoon red pepper
1 shot Wild Turkey

Trim and cut chicken wings, toss in bowl with salt, pepper and a bit of oil. Grill or broil. Sauté tomato paste, garlic, hot sauce to taste (we like a lot), cayenne and red pepper. Add chicken and coat with sauce. Arrange close together on a platter. Douse with Wild Turkey and set a flame. Serve with celery sticks (optional) and blue cheese dressing. Our favorite recipe comes from the cookbook New Recipes from Moosewood Restaurant.

Serves four in moderation.

Blue Cheese Dressing

garlic clove, minced or pressed
(or just throw the whole thing in the food processor)
6 ounces blue cheese
1 1/2 cups sour cream
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh lemon juice
1/2 cup milk

Put all ingredients except a third of the blue cheese in a blender or food processor. Blend to a smooth , creamy consistency. Crumble the remaining blue cheese and stir it into the dressing.
Refrigerated and tightly covered, Blue Cheese Dressing will stay fresh for 4 or 5 days.
